Keep butter paper or plastic paper to set the chikki. You can also set it on a plate; but be sure to lubricate it with ghee before setting.
The consistency of the gur syrup is the key to the perfect chikki. To test consistency, take a bowl of cold water and pour some syrup into it. Wait 3-4 minutes and check if it has turned into hard toffee. If so, your gur syrup is ready for use.
Always add ghee to the gur syrup to get a shiny texture.
